Tended by Hand, Shared by Tradition: The Evolution of Dash Farms

Every great harvest begins with a willingness to listen to the land. Dash Farms was not built overnight; it is the culmination of years of quiet dedication, agricultural passion, and a shared vision to bring the very best of regional Victoria to the tables of discerning food and wine lovers.

Located at the picturesque foothills of Mount Alexander, our farm represents a beautiful convergence of patience, premium geography, and artisanal craftsmanship. What started as a focused pursuit of exceptional viticulture has naturally blossomed into a diverse, thriving farm ecosystem where grapevines, custom-inoculated orchards, and premium fruit trees all flourish in perfect harmony.

The Chapters of Our Journey

  1. The Vineyards of Ticklewoodi
    Our story truly took root with Ticklewoodi Wines. For nearly a decade, we dedicated ourselves to mastering the unique microclimate and rich, free-draining soils of the region. Tending to our winegrape varieties taught us the absolute value of patience—understanding that the finest flavours cannot be rushed, and that exceptional produce is always defined by the unique character of the soil it grows in.
  2. Cultivating the Extraordinary: Harcourt Truffles
    In 2020, we took a monumental step forward by planting 500 French oak trees right alongside our premium vineyards, establishing Harcourt Truffles. Inoculated with highly prized French black truffle (Tuber melanosporum), this orchard required years of meticulous care, leading to our milestone first harvest in 2024. Expanding our horizons further, we added 45 pine nut trees inoculated with rare Bianchetto white truffles, waiting expectantly for their arrival this season.
  3. The Orchard Standard
    To complement our truffles and grapes, we introduced our premium apple orchards. Tended with the same rigorous care as our high-end agricultural products, our apples reflect our simple farm-wide standard: reliable crunch, maximum freshness, and exceptional consistency for independent grocers and local families alike.

Today, Dash Farms stands as a unified house of premium primary producers. By managing our diverse operations under one roof, we ensure that the same uncompromising family values, environmental respect, and premium standards are poured into every bottle of wine, every handpicked apple, and every unearthed truffle.

We aim to produce grapes in a way that minimises our environmental footprint. Our management program embraces the principles of integrated pest management, which enables us to minimise pesticide inputs and work in true harmony with nature.
