Harcourt Truffles

Earth’s Most Coveted Delicacy, Grown at the Foothills of Mount Alexander

Nestled within the premium winegrape vineyard of Ticklewoodi Wines, Harcourt Truffles is where exceptional geology meets dedicated craftsmanship. Established in 2020, our truffles thrive in the free-draining, nutrient-rich soils at the base of Mount Alexander. Here, the distinct seasonal shifts of the region create the absolute ideal conditions for producing truffles of remarkable aroma, depth, and culinary character.

Our Truffliere

Great truffles require patience, precision, and an uncompromised environment. Our carefully managed orchard features two distinct, premium varieties cultivated for the high-end culinary market:

  1. French Black Truffle (Tuber Melanosporum): Our orchard boasts 500 French oak trees, meticulously inoculated to produce the highly prized French black truffle. Following years of careful soil maintenance and tree care, these oaks began successfully producing in 2024, yielding truffles with intense, earthy aromas and complex flavour profiles.
  2. Bianchetto White Truffle (Tuber Borchii): In addition to our black truffles, we have established 45 pine nut trees inoculated with the rare Bianchetto white truffle. Revered by chefs for its garlicky, sharp, and luxurious sensory profile, our very first harvest is anticipated this season or next.

The Art of the Hunt

Every single truffle we harvest is located by scent, carefully unburied by hand at the absolute peak of its maturity, and washed with precision to ensure it arrives in your kitchen in pristine, restaurant-ready condition.
